​Make just enough of this recipe. Use the portion planning tool to calculate exactly how much of each ingredient you’ll need.1. Pre heat oil in sauce pan over medium heat, add leeks and mushrooms. Cook until both are softened (about 5 min). Add smoked turkey and stir to combine. Remove from the heat and set aside.2. In the same sauce pan, add cream and reduce on medium heat for 5 minutes. Add cheese while stirring.3. Place 1/8th of this sauce with the turkey mixture and mix well. 4. In a pot with salted water, add the square pasta sheets.5. Cook until the pasta is al dente. If this is fresh pasta it will take about 5-8 minutes. Remove the pasta and lay out on a cutting board.6. Add a dollop of the smoked turkey mixture to each pasta sheet.7. From corner to corner fold each sheet and press the edges tight.8. Place the remaining sauce on the stove and heat to low heat. Add the ravioli to the pan and bring up to temperature. 9. Place on a plate, pour over the sauce. Finish with chiffonade of basil.
