In a blender or food processer, add juices, zests, ground coriander and honey. Mix at medium speed until blended together.2. With blender running, slowly add the oil, which will emulsify and form a creamy dressing. Place in bowl and set aside.3. In the palm of each leaf of lettuce add avocado slices, pepper slices and cilantro sprigs.4. Place the shrimp meat on top and drizzle with the creamy dressing. (Save a little dressing for dipping.)5. Starting from the stem of each leaf, roll up and secure with a skewer.6. Hold in the fridge or serve right away.
