In a bowl, combine goat cheese, ricotta and Italian seasoning and mix well.3. On a grilling surface, grill both side of tomato slices until some char marks appear. Set aside.4. Brush one side of each bun slice with oil. Place on a grilling surface, oiled side down and toast until golden brown.5. Remove bun and place on work station grilled side up. Layer bun with goat cheese mixture on both sides. On the bottom half, layer chicken, spinach, grilled tomato and Parmesan cheese.6. Cover with top halves and press gently to pack.5. Heat in a Panini press or on the grill for 3-4 minutes.8. Serve immediately
