Cut the fish into small diced pieces and set aside.Peel the outer shell of the shrimp, de-vein, and then set aside.In a larger pot add the oil and heat to medium heat.When the oil is hot cook the vegetables until they are sweet, 3-4 minutes.Add the stock and bring to a simmer.  Add the shrimp first and cook for 1 minute.
