Pick off the large chunks of leftover meat from the turkey carcass. Set aside in a bowl.In a large stockpot, add a dash of oil, and add in turkey carcass, onions, carrots and celery. Sautee for 3 min. Add in water to cover. Toss in the bay leaf and parsley. Bring to a boil. When it's on rolling boil, reduce heat to simmer and leave it to cook for 1 hour.Using tongs, remove turkey carcass from the soup pot.Add turkey meat back into the soup pot. Reduce heat to low.Season with salt and pepper to taste.VariationsLeftover stuffing makes great dumplings for soup! Tip for those tight on time * If you are strapped on time, make this soup in a slow cooker! Just combine all ingredients and cook on low setting overnight. Strain out the broth and remove the carcass before serving!
