​Preheat oven to 175°C. Season chicken with salt and pepper to taste.Stuff the chicken with diced onion and rosemary.Place chicken in a 9 by 12 inch baking dish or roasting pan.Roast the chicken in a preheated oven for 1-1½ hours until chicken is cooked and juices run clear.Cooking time may vary depending on size of chicken.Whole bird prepares 4 servings allowing for left overs.
