​Make just enough of this recipe. Use the portion planning tool to calculate exactly how much of each ingredient you’ll need.1. In a large pot, cover potatoes with water and boil until fork tender. Drain of the water and place potatoes on baking sheet. Cool for 20 to 30 minutes. (You can put in the fridge after they have been sitting for 5 min then remove after 15 min from fridge.)2. Place raw bacon on sheet pan and bake in the oven for 8-14 min at 350°F until crisp but not burnt.3. Chop bacon into ¼ inch pieces and set aside4. In a large bowl, place mayonnaise, mustard and vinegar and mix well.5. Cut the potatoes into quarters and place in the large bowl with dressing and mix well.6. Add the remaining ingredients and toss all well7. Cover and store in a refrigerated cooler at 4°C until ready to serve. (Best results with 3 to 6 hours of rest time.)
